Khadak Irani Chai

Brewing Instructions
This Irani recipe comes straight from the famed lanes of Hyderabad. We’d love for you to try your hand at it and let us know how it tasted.
This recipe makes for 2x 100ml cups of chai.

INGREDIENTS

Ingredients
  • 2/3 cup (170 ml) full-fat milk
  • 1 cup (230 ml) water
  • 2 tbsp sugar (based on your taste)
  • 1 tbsp Khadak tea blend
  • 1-2 strands of saffron

PROCESS

  • Milk Prep:
    In a small saucepan, add 2/3 cup of full-fat milk. Simmer on low heat, stirring occasionally, until the milk reduces by half and thickens slightly. Set aside.
  • Tea Decoction:
    In a separate saucepan, bring 1 cup of water to a boil. Add 1 tbsp of the Khadak tea blend and 2 tbsp of sugar. Continue boiling until the mixture reduces by half, then strain to remove the tea leaves.
  • Combine and Serve:
    Mix the reduced milk and tea decoction together. Stir in 1 tsp of evaporated milk and add 1-2 strands of saffron for a hint of aroma and color. This step is completely optional.
  • Pour into cups and enjoy your rich Hyderabadi Irani chai.
